In a large skillet, heat 1 tablespoon of vegetable oil over medium-high heat. Add the pumpkin cubes and sauté until lightly golden brown on all sides (approximately 5 minutes). Remove from skillet and set aside.

In a stock pot or Dutch oven, heat the remaining 2 tablespoons of vegetable oil over medium-high heat. Add the chopped onion and minced garlic and sauté until softened and golden, about 5 minutes. Stir in the ground turmeric. Add the beef stew meat and sauté until browned on all sides, about 5 minutes.

Pour in the water, add salt, and pepper; bring the mixture to a boil. Reduce the heat to low, cover, and simmer for about 30 minutes, or until the beef is slightly tender.

Stir in the sautéed pumpkin, pitted prunes, vinegar, sugar, salt, and ground cinnamon to the stock pot. Cover and continue to simmer for approximately 45 minutes, or until the beef and pumpkin are both tender and the flavors have melded together beautifully.

To serve, garnish with a generous pinch of saffron threads.

For an even richer flavor, try browning the beef in batches to avoid overcrowding the pot.
Adjust the amount of sugar and vinegar to suit your personal taste preferences.
