In a large plastic bag, combine the beef tenderloin, pork loin, and masa harina. Seal the bag and shake well to coat the meat evenly.

Heat the olive oil in a large skillet over medium-high heat. Add the coated meat cubes and cook, stirring occasionally, until browned on all sides (approximately 8-10 minutes).

Transfer the browned meat to a slow cooker. Add the chopped red onion, fresh tomatoes, diced green chile peppers, low-sodium beef broth, ground cumin, cubed potato, minced garlic, fresh oregano, fresh cilantro, cayenne pepper, salt, and white pepper.

Stir all ingredients together gently to ensure they are well combined.

Cover the slow cooker and cook on Low heat for 8 hours, or until the meat is very tender and easily shreds with a fork.

For a richer flavor, consider searing the meat in batches to avoid overcrowding the skillet.
If you prefer a thicker stew, you can add an additional tablespoon of masa harina during the last hour of cooking.
Serve hot with warm tortillas, tortilla chips, a dollop of sour cream, and a sprinkle of fresh green onions for a truly authentic New Mexican experience.
