Slow Cook the Birria: Layer chopped onions at the base of your slow cooker. Arrange the beef chuck roast over the onions and nestle in the bay leaves. Pour the prepared chile sauce generously over the meat.

Cook to Perfection: Cook on High setting for about 5 hours, or until the beef is incredibly tender and easily shreds with a fork.

Reduce and Intensify: Remove the shredded beef from the sauce. Continue cooking the sauce in the slow cooker (or in a separate saucepan on the stovetop) until it reduces and thickens, approximately 35-45 minutes. This step concentrates the flavors beautifully.

Combine and Season: Return the shredded beef to the reduced sauce. Season to taste with salt. Serve hot and garnish generously!

For an even richer flavor, consider searing the beef chuck roast before adding it to the slow cooker.
