For a richer flavor, sauté the onions, carrots, and celery in a tablespoon of butter or coconut oil before adding the garlic and spices. Adjust the amount of green chiles to your liking. For a milder stew, use only 2 cans or remove the seeds before adding. For extra heat, add a pinch of cayenne pepper. Feel free to substitute other vegetables based on what you have on hand. Zucchini, bell peppers, or even sweet potatoes would be excellent additions. Serve with a dollop of sour cream or Greek yogurt, a sprinkle of fresh cilantro, and a warm tortilla on the side.
