Step

In a saucepan, bring rice and water to a boil. Reduce heat to medium-low, cover, and simmer until rice is tender and the liquid has been absorbed. (20-25 minutes). Stir in corn while the rice is still hot.

Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the drained black beans, chickpeas, and minced garlic. Cook and stir until warmed through. (3-5 minutes)

In a large bowl, combine the cooked rice mixture with the black bean and chickpea mixture. Add the shredded Cheddar cheese, 1/3 cup of all-purpose flour, and a pinch of red pepper flakes. Mix well until a thick mixture forms. Shape the mixture into patties.

In a small bowl, mix together the remaining 1/4 cup of all-purpose flour, Cajun seasoning, and a pinch of red pepper flakes. Coat each patty thoroughly in the flour mixture.

Heat 1 tablespoon of olive oil in a skillet over medium heat. Pan-fry the patties until golden brown and crispy on both sides. (about 5 minutes per side)

For a spicier burger, add a finely chopped jalapeño to the bean mixture.
To ensure the patties hold together well, refrigerate them for 30 minutes before frying.
Serve on your favorite buns with toppings like guacamole, salsa, sour cream, and lettuce.
