Follow The Directions

01

Step

Gather all ingredients. (5 minutes)

02

Step

In a large bowl, beat egg yolks with an electric mixer on medium speed until pale yellow and slightly thickened, about 2 to 3 minutes.

03

Step

Gradually beat in sugar, vanilla extract, and 1/4 teaspoon nutmeg until well combined. (2 minutes)

04

Step

In a separate bowl, whisk in cream and milk. (1 minute)

05

Step

Slowly temper the egg yolk mixture by gradually adding the cream and milk mixture while whisking continuously. (3 minutes)

06

Step

Stir in chilled brandy and spiced rum. (1 minute)

07

Step

In another clean, dry bowl, beat egg whites with an electric mixer until stiff peaks form. (3 minutes)

08

Step

Gently fold the beaten egg whites into the eggnog mixture until just combined. (2 minutes)

09

Step

Cover and chill in the refrigerator for at least 4 hours, or preferably overnight, to allow the flavors to meld. (240 minutes)

10

Step

Before serving, sprinkle individual servings with remaining nutmeg.

For a richer flavor, use aged or XO brandy.
Adjust the amount of brandy and rum to your preference. For a non-alcoholic version, omit the alcohol and add 1/2 teaspoon of rum extract.
Use fresh nutmeg for the best flavor.
Pasteurized eggs can be used for safety, especially if serving to those with weakened immune systems.
The eggnog can be stored in the refrigerator for up to 3 days.
