Add the diced potatoes, red wine, baby carrots, bacon strips, diced celery, diced onion, minced garlic, seasoning salt, and bay leaves to the slow cooker. Stir well to combine all ingredients. (10 minutes)

Cover the slow cooker and set to cook on Low for 10-12 hours or on High for 4-6 hours, or until the beef is tender and the vegetables are cooked through. (Cooking time varies)

For a richer flavor, sear the beef in a skillet before adding it to the slow cooker.
Adjust the amount of red wine to your preference. A dry red wine like Cabernet Sauvignon or Merlot works best.
If you prefer a thicker stew, mix 1 tablespoon of cornstarch with 2 tablespoons of cold water and stir it into the stew during the last 30 minutes of cooking.
Remove the bay leaves before serving.
