In a large nonreactive bowl, combine the red onion, garlic, lemon grass, soy sauce, peanut oil, turmeric, brown sugar, cumin, ginger, salt, and pepper. Whisk to blend thoroughly. (5 minutes)

Reserve 2 tablespoons of the marinade in a small, airtight container and refrigerate. This will be used for basting during grilling. (2 minutes)

Add the pounded chicken breasts to the remaining marinade in the bowl, ensuring each piece is well coated. Cover and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to fully penetrate the chicken. (5 minutes)

About 30 minutes before grilling, remove the chicken from the refrigerator. Discard the used marinade. Cut each chicken breast on the diagonal into 6 long, thin strips. Thread each strip onto a soaked skewer. (20 minutes)

Preheat your outdoor grill to medium-high heat and lightly oil the grates to prevent sticking. (5 minutes)

Grill the chicken skewers, turning frequently and basting with the reserved marinade, until the chicken is cooked through and has developed a beautiful golden-brown color with slightly crispy edges. This should take approximately 5-8 minutes per skewer, depending on the heat of your grill. (8 minutes)

Remove the skewers from the grill and serve immediately. Garnish with fresh cilantro or chopped peanuts, if desired.

For an extra layer of flavor, consider adding a pinch of chili flakes or a dash of sriracha to the marinade.
To prevent the wooden skewers from burning on the grill, ensure they are thoroughly soaked in water for at least 30 minutes before use.
If you don't have an outdoor grill, these satay skewers can also be cooked under a broiler or in a grill pan. Adjust cooking time accordingly.
