For an even richer flavor, use European-style butter with a higher fat content. Toast the hazelnuts for an enhanced nutty flavor. Spread them on a baking sheet and bake at 350°F (175°C) for 8-10 minutes, or until fragrant. Do not overbake the cookies! They should be slightly soft in the center when you remove them from the oven; they will continue to set as they cool. Store cooled cookies in an airtight container at room temperature for up to 3 days.
