In a stock pot or large deep skillet, pour the beef stock over medium-high heat. Stir in the doenjang until fully dissolved. (2 minutes)

Add the dashi kombu and chopped garlic, and bring the mixture to a boil. (5 minutes)

Gently introduce the tofu, napa cabbage, daikon radish, and yellow squash into the boiling broth. Cover the pot and return to a gentle boil. Cook for 5 minutes to allow the flavors to meld.

Incorporate the sliced green onions and hot red pepper. Boil for approximately one minute, or until the onions and pepper release their fragrant aroma and display vibrant colors.

Ensure the total cooking time does not exceed 15 minutes to maintain the integrity of the vegetables. Remove and discard the dashi kombu.

Serve immediately, allowing the soup to warm you from the inside out.

For a vegetarian version, substitute vegetable broth for beef stock.
Adjust the amount of red pepper to your preferred level of spice.
Fresh shiitake mushrooms can be added for an earthy flavor boost.
Doenjang can vary in saltiness, so taste and adjust accordingly. Start with a smaller amount and add more to taste.
Consider adding a swirl of sesame oil just before serving for added richness and aroma.
