Follow The Directions

01

Step

In a large mixing bowl, combine the liquid egg whites, instant oats, low-fat cottage cheese, vanilla protein powder, stevia powder, vanilla extract, and ground cinnamon. Mix thoroughly until all ingredients are well incorporated. (2 minutes)

02

Step

Heat a large skillet or griddle over medium-high heat. Once hot, lightly coat with cooking spray. (3 minutes)

03

Step

Pour approximately 1/3 cup of batter onto the hot skillet for each pancake. Use the back of a measuring cup or spoon to gently flatten the batter into a uniform circle. (1 minute)

04

Step

Cook the pancakes until bubbles begin to form on the surface and the bottoms are golden brown, approximately 3 to 4 minutes. (4 minutes)

05

Step

Carefully flip the pancakes and cook for an additional 2 to 3 minutes, or until the second side is golden brown and the pancakes are cooked through. (3 minutes)

06

Step

Repeat with the remaining batter, adding more cooking spray to the skillet as needed.

These pancakes are great for meal prepping! Store them in an airtight container in the refrigerator for up to 5 days. Reheat in the microwave for 20-30 seconds or enjoy cold.
For a richer flavor, try using a high-quality vanilla extract or adding a pinch of nutmeg to the batter.
Feel free to experiment with toppings! Sugar-free maple syrup, fresh berries, a dollop of Greek yogurt, or a sprinkle of chopped nuts all make delicious additions.

My kids even enjoy these, and they are so picky. I use honey instead of stevia for them.

The batter was a little thick, so I added a splash of almond milk. Worked perfectly!
