In a medium-sized, heavy-bottomed saucepan, combine the cherry tomatoes, red onion, balsamic vinegar, chile pepper, garlic, Italian seasoning, sugar, salt, and pepper. (5 minutes)

Place the saucepan over medium-low heat. Bring the mixture to a gentle simmer, then reduce the heat to low. Cover and cook for 15 minutes, allowing the tomatoes to soften and release their juices. (15 minutes)

Using a potato masher or the back of a spoon, gently mash the tomatoes to further release their juices and begin to thicken the sauce. (5 minutes)

Continue to cook, uncovered, stirring occasionally to prevent sticking, until the sauce has thickened to your desired consistency. This should take approximately 45 minutes, but may require more or less time depending on the heat and the juiciness of the tomatoes. (45 minutes)

Remove from heat and allow the sauce to cool completely. (30 minutes)

Once cooled, transfer to an airtight container and refrigerate until ready to use. The sauce will continue to thicken as it chills.

For a smoother sauce, use an immersion blender to puree the sauce after cooking. Be careful when blending hot liquids.
Taste and adjust the seasoning as needed. You may want to add more sugar, salt, or pepper to balance the flavors.
This sauce can be stored in the refrigerator for up to 5 days or frozen for longer storage.
Consider adding a splash of red wine vinegar for extra depth.
Roasting the cherry tomatoes and red onions before simmering will add a deeper, sweeter flavor to the sauce. Toss them with olive oil, salt, and pepper and roast at 400°F (200°C) until softened and slightly caramelized before adding to the saucepan.
