Follow The Directions

Heat olive oil in a 12-inch nonstick skillet over medium heat. (1 minute)

Add ground beef and cook, breaking it apart with a spoon, until browned. (5-8 minutes)

Sprinkle taco seasoning, chili powder, cumin, smoked paprika, garlic granules, cayenne, salt, and pepper over the beef. Stir to combine and cook for another minute. (2 minutes)

Stir in the thawed potatoes and cook for 2-3 minutes, then add the RO*TEL tomatoes (with juice). (3 minutes)

Continue to cook until the potatoes are tender and most of the liquid has been absorbed. (4-5 minutes)

Sprinkle with shredded cheddar cheese and sliced green onions. Garnish with fresh cilantro, if desired.

For an extra kick, add sliced jalapeños to the skillet.
Serve with your favorite toppings such as avocado slices, sour cream, or a dollop of Greek yogurt.
This skillet is excellent served in lettuce wraps, corn or flour tortillas, or topped with fried eggs for a breakfast hash.
