Follow The Directions

01

Step
8 mins

Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add sliced onion and mushrooms and cook, stirring occasionally, until softened and lightly browned, about 7 minutes.

02

Step
10 mins

Add minced garlic and red pepper flakes. Cook for 1 minute, until fragrant.

03

Step
2 mins

Stir in salt, chicken broth, and rotini pasta. Bring to a boil, then reduce heat to low, cover, and simmer for 10 minutes, stirring halfway through, until pasta is cooked through and most of the liquid is absorbed.

04

Step

Turn off the heat. Add baby spinach, cover, and let sit for 2 minutes, or until spinach is wilted.

05

Step

Stir in grated Parmesan cheese and lemon juice until well combined. Serve immediately, garnished with additional Parmesan cheese, if desired.

For a richer flavor, use a combination of cremini and shiitake mushrooms.
Adjust the amount of red pepper flakes to your preference.
Feel free to add a dollop of mascarpone cheese at the end for extra creaminess.
This dish is best served immediately, but leftovers can be stored in the refrigerator for up to 2 days.
