Add coconut milk and rock sugar, stirring to dissolve the sugar, and simmer for 20 more minutes to blend the coconut milk and taro. Gently stir in the soft tapioca pearls until well combined. Let cool to room temperature, or serve chilled.

For a richer flavor, use full-fat coconut milk.
Adjust the amount of rock sugar to your preference.
If you can't find rock sugar, regular granulated sugar can be used as a substitute.
The dessert will thicken as it cools.
