For a richer sesame flavor, lightly toast the sesame seeds in a dry pan before using them as a garnish. If you prefer a thicker sauce, remove the chicken from the skillet after cooking. In a separate small bowl, whisk together 1 tablespoon of cornstarch with 2 tablespoons of cold water to create a slurry. Pour the slurry into the skillet and bring to a simmer, stirring constantly until the sauce thickens. Return the chicken to the skillet and toss to coat. Adjust the amount of red pepper flakes to suit your spice preference. For a milder flavor, omit the red pepper flakes altogether. This recipe is easily customizable. Feel free to add other vegetables, such as bell peppers, mushrooms, or zucchini, to the skillet along with the chicken. For gluten-free version, substitute the all-purpose flour with tapioca flour.
