For an extra layer of flavor, try adding a pinch of dried thyme or a splash of sherry to the mushrooms while they're sautéing. Use a rubber spatula to gently scrape the bottom of the pan to prevent the eggs from sticking and to create even curds. Don't overcook the eggs! They should be slightly moist when you remove them from the heat as they will continue to cook from the residual heat.
