Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. The chocolate will set as the cookies cool.

For a richer flavor, use European-style butter.
Chopping the chocolate into varying sizes will create interesting textures in the cookies.
If you don't have parchment paper, lightly grease the baking sheet.
Store leftover cookies in an airtight container at room temperature for up to 3 days.
