Taste and season with salt and pepper to your liking. Remove from heat and divide amongst serving bowls. Top each bowl with minced cayenne pepper and a drizzle of extra-virgin olive oil. (8-10 minutes)

For a richer flavor, use homemade chicken broth.
If you can't find fresh herbs, dried herbs can be substituted. Use about 1 teaspoon of each.
A splash of white wine vinegar at the end can add a bright, acidic note to balance the richness of the stew.
