In a double boiler or a heatproof bowl set over a simmering pot of water (ensure the bowl doesn't touch the water), whisk together the egg yolks, white vinegar, granulated sugar, yellow mustard, and sea salt. (5 minutes)

Cook over medium heat, constantly whisking, until the mixture thickens enough to coat the back of a spoon. This should take approximately 8-10 minutes. Remove from heat.

Immediately add the halved marshmallows to the warm mixture. Stir continuously until the marshmallows are completely dissolved and the mixture is smooth. (3 minutes)

In a separate bowl, whip the heavy whipping cream using an electric mixer until soft peaks form. Be careful not to overwhip. (5 minutes)

Gently fold the whipped cream into the marshmallow mixture until well combined. If the dressing is thicker than desired, thin it out by adding a tablespoon or two of additional heavy cream or your favorite fruit juice until you reach the perfect consistency. (2 minutes)

Pour the dressing over your favorite fruit salad, using enough to coat the fruit evenly. Toss gently to combine.

Store leftover dressing in an airtight container in the refrigerator for up to one week. The flavor may intensify slightly over time.

For a tangier flavor, try using a tablespoon of lemon juice in addition to the vinegar.
If you don't have a double boiler, a heatproof glass bowl set over a pot of simmering water works just as well.
For a smoother dressing, ensure the marshmallows are fully dissolved before adding the whipped cream.
Consider adding a splash of vanilla extract for extra flavor.
