For a thicker chili, remove the lid during the last 30 minutes of simmering to allow some of the liquid to evaporate. Adjust the amount of jalapeño and chipotle peppers to suit your desired level of spiciness. Remove the seeds from the jalapeños for a milder flavor. Serve with your favorite toppings, such as shredded cheddar cheese, sour cream, chopped cilantro, and green onions. Cornbread is a classic accompaniment. This chili can also be made in a slow cooker. Simply combine all ingredients in the slow cooker, stir well, and cook on low for 6-8 hours or on high for 3-4 hours.
