For a richer flavor, use homemade chicken broth. You can substitute spinach for escarole if preferred. Make the meatballs ahead of time and refrigerate until ready to use to save time. If you want a thicker soup, use less broth or add a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons cold water) to the soup during the last few minutes of cooking.
