In a large saucepan, combine the milk, heavy cream, and ground nutmeg. Heat over medium heat, stirring occasionally, until the mixture just begins to simmer. Look for tiny bubbles forming around the edges of the pan. (Approximately 8-10 minutes)

Temper the egg yolks by gradually whisking a small amount of the hot milk mixture into the egg yolk mixture. Continue adding the hot milk in a slow, steady stream, whisking constantly to prevent the eggs from curdling. Once all the hot milk has been incorporated, pour the mixture back into the saucepan.

Return the saucepan to medium heat and cook, stirring constantly with a spatula or wooden spoon, until the eggnog thickens slightly and reaches 160°F (70°C) on an instant-read thermometer. The eggnog should be thick enough to coat the back of a spoon. (Approximately 3-5 minutes)

Remove the eggnog from the heat and pour it into a large pitcher or bowl. Cover and refrigerate for at least 6 hours, or preferably overnight, to allow the flavors to meld and the eggnog to chill completely.
