In a large bowl, combine milk and olive oil. Gradually add 1 1/2 cups of gluten-free flour, about 1/4 cup at a time, mixing well after each addition to create a thick but pourable batter. If the batter appears too thin, incorporate additional flour, 1/8 cup at a time.

Stir the yeast mixture into the batter until just combined. Cover the bowl with a lid or plastic wrap and let it rest on the kitchen counter for 8 hours to overnight. The batter should double or even triple in volume, so ensure your bowl is sufficiently large.

When ready to cook, gently mix the beaten egg and salt into the batter until fully incorporated.

Preheat your waffle iron according to the manufacturer's instructions.

Pour about 1/4 cup of batter onto the preheated waffle iron. Cook until the waffle is golden brown and the iron stops steaming, approximately 5 minutes. Repeat with the remaining batter.

For extra crispy waffles, try adding a tablespoon of cornstarch to the dry ingredients.
If you prefer a richer flavor, substitute melted butter for olive oil.
These waffles freeze beautifully! Allow them to cool completely before freezing in a single layer on a baking sheet. Once frozen, transfer to a freezer bag for longer storage. Reheat in a toaster or oven.
