For a milder flavor, remove the membranes from the jalapeños in addition to the seeds. Experiment with different cheese combinations! Gruyere, Monterey Jack, or even a smoked Gouda would be delicious. If you don't have a steamer, you can blanch the jalapeños in boiling water for 2-3 minutes instead. These are best served warm, but they are also tasty at room temperature. To add a bit of sweetness, consider adding a small drizzle of honey or maple syrup to the cheese mixture.
