Prepare the Tongue: Place the beef tongue in a large pot and cover with water. Bring to a boil over high heat, then reduce to a simmer. Cover and cook until the tongue is very tender (approximately 3 hours).

Soak the Beans: In a separate large saucepan, combine the black beans with 1 quart of water. Bring to a boil for 2 minutes, then remove from heat, cover, and let stand for 1 hour. This helps to soften the beans and reduce cooking time.

Combine Meats and Beans: Once the tongue is cooked, drain and rinse it under cold water. Make a lengthwise cut in the skin and peel it off. Slice the tongue into 1/4-inch slices. Add the sliced tongue, dried beef, chourico, and bacon to the soaked black beans. Add more water if needed to ensure the meats and beans are covered. Bring to a boil, then reduce heat and simmer, covered, for 1 hour.

Prepare the Aromatics: While the meats and beans simmer, heat the vegetable oil in a saucepan over medium heat. Add the garlic and onion and cook until softened and translucent (about 5 minutes). Stir in the jalapeno and tomato. Season with salt and cayenne pepper. Cook until the vegetables are softened (about 5 minutes).

Blend and Finish: Remove half a cup of the beans and mash them with some of the cooking liquid to create a thick sauce. Stir in the reserved aromatic vegetables. Return the sauce mixture to the pot and continue to simmer the beans until they are very tender (about 1 hour more).

Serve: Arrange the sliced tongue and sausage attractively on a serving platter. Pour the bean sauce over the top and garnish with thin slices of fresh orange. Serve the remaining beans in a separate bowl.

For a richer flavor, consider using smoked bacon or adding other smoked sausages to the stew.
Adjust the amount of jalapeno pepper to your preferred level of spiciness.
Serve with white rice, collard greens (couve), and farofa (toasted cassava flour) for a complete Brazilian experience.
