For a vegan version, substitute the yogurt with a plant-based alternative such as soy or almond yogurt. If you don't have a blender, you can finely grate the cucumber and whisk all the ingredients together by hand. The texture will be slightly different, but still delicious. The dressing can be stored in the refrigerator for up to 3 days.
