In a slow cooker, combine the browned buffalo, diced tomatoes with green chiles, tomato soup, drained kidney beans, drained chili beans, chopped onion, minced garlic, chopped Anaheim chile pepper, chopped poblano chile pepper, chili powder, red pepper flakes, 1 1/2 teaspoons ground cumin, 1/2 teaspoon cayenne pepper, salt, and black pepper. Stir well to ensure all ingredients are evenly distributed.

Cover the slow cooker and cook on low heat for at least 8 hours, or preferably overnight, to allow the flavors to fully develop and meld together. (8+ hours)

Before serving, give the chili a good stir and taste for seasoning adjustments. Add more salt, pepper, or chili powder as needed to achieve your desired flavor profile.

For a smokier flavor, consider adding a chipotle pepper in adobo sauce, finely chopped.
To thicken the chili, mash a handful of the kidney beans before adding them to the slow cooker.
Serve with your favorite toppings such as shredded cheese, sour cream, chopped cilantro, and a dollop of Greek yogurt.
This chili freezes exceptionally well, making it a perfect make-ahead meal.
