For extra flavor, add 1/2 cup of chopped walnuts or pecans to the batter. Store muffins in an airtight container at room temperature for up to 3 days, or in the freezer for longer storage. If you don't have whole wheat flour, you can use all-purpose flour instead, but the muffins will be slightly less dense and nutritious. For a sweeter muffin, increase the brown sugar by 1/4 cup.
