Follow The Directions

01

Step

Preheat your oven to 350°F (175°C). Prepare a 12-cup muffin tin by lining it with paper liners. (5 minutes)

02

Step

In a large bowl, mash the bananas until smooth. No lumps allowed! (2 minutes)

03

Step

Add the brown sugar, egg whites, whole egg, and canola oil to the mashed bananas. Mix well until everything is evenly combined. (3 minutes)

04

Step

In a separate bowl, whisk together the whole wheat flour, rolled oats, baking soda, salt, and baking powder. (2 minutes)

05

Step

Gently fold the dry ingredients into the wet ingredients until just combined. Be careful not to overmix – a few streaks of flour are okay. (5 minutes)

06

Step

Fill each muffin liner about 2/3 full with batter. (3 minutes)

07

Step

Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out clean and the tops spring back lightly when touched. (25 minutes)

08

Step

Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely. (10 minutes)

For extra flavor, add 1/2 cup of chopped walnuts or pecans to the batter.
Store muffins in an airtight container at room temperature for up to 3 days, or in the freezer for longer storage.
If you don't have whole wheat flour, you can use all-purpose flour instead, but the muffins will be slightly less dense and nutritious.
For a sweeter muffin, increase the brown sugar by 1/4 cup.
