Follow The Directions

Step

Heat olive oil in a non-stick skillet over medium heat. Add the chopped onion and green pepper. Cook, stirring occasionally, until the onion becomes translucent and slightly softened (approximately 5 minutes).

Stir in the diced ham and garlic salt. Cook for another 2-3 minutes, allowing the ham to warm through and lightly brown.

In a separate bowl, whisk together the eggs, chopped asparagus, and milk until well combined.

Pour the egg mixture evenly over the ham and vegetable mixture in the skillet. Arrange the Provolone cheese slices evenly over the top of the omelet.

Cook for approximately 3-5 minutes, or until the eggs begin to set around the edges and the cheese begins to melt. Gently lift the edges of the omelet with a spatula to allow any uncooked egg to flow underneath.

Once the eggs are mostly set but the top is still slightly moist, carefully fold the omelet in half. Cook for an additional 2-3 minutes, or until the cheese is fully melted and the omelet is heated through.

For a richer flavor, try using smoked ham.
If you don't have Provolone cheese, mozzarella or fontina would also work well.
Feel free to add other vegetables like mushrooms or spinach to customize this omelet.
A sprinkle of freshly cracked black pepper at the end adds a nice touch.
