Air Fry the Asparagus: Arrange the asparagus spears in a single layer on the crisping tray of your air fryer basket. Lightly spritz with olive oil cooking spray to encourage browning.

Cook Asparagus: Air fry at 375 degrees F (190 degrees C) for 10 minutes, shaking the basket vigorously halfway through to ensure even cooking (5 minutes). Transfer the cooked asparagus to a large bowl.

Season the Tofu: In the same large bowl, whisk together olive oil, 1 teaspoon soy sauce, rice vinegar, and garlic powder. Cut the pressed tofu into 1/2- to 1-inch cubes and add them to the bowl. Gently toss to coat the tofu cubes on all sides, being careful to keep them as intact as possible. Sprinkle the nutritional yeast over the tofu and toss again to coat.

Air Fry the Tofu: Place the seasoned tofu cubes onto the crisping tray in the air fryer basket. Cook at 375 degrees F (190 degrees C) for 10 minutes, shaking the basket vigorously after 5 minutes to promote even browning and crisping.

Combine and Serve: Add the air-fried tofu cubes to the bowl with the cooked asparagus. Gently mix, pressing some of the tofu cubes apart to create a semi-scrambled texture. Drizzle the sweet soy sauce over the mixture and top generously with chopped almonds. Serve immediately and enjoy!

For an extra layer of flavor, consider adding a pinch of red pepper flakes to the sweet soy drizzle.
If you don't have mirin, you can substitute with a dry sherry or rice wine vinegar, but add a touch more brown sugar to compensate for the sweetness.
Feel free to customize this scramble with other vegetables like bell peppers, onions, or mushrooms. Just adjust the air frying time accordingly.
For best results, use extra-firm tofu. It holds its shape better during cooking and yields a more satisfying texture.
