Preheat an air fryer to 350°F (175°C). Line the basket with parchment paper and lightly coat with cooking spray. Set aside. (5 minutes)

In a mixing bowl, combine the self-rising flour and Greek yogurt. On a lightly floured surface, knead the dough until it forms a cohesive ball. Divide the dough into 4 equal portions. (10 minutes)

On a floured surface, roll each portion into a rope approximately 10-12 inches long. Pinch the ends together to form a donut shape. Place the donuts in the prepared air fryer basket, ensuring they don't touch. Lightly spray the tops with cooking spray. (10 minutes)

Air fry until the donuts begin to brown, about 3 ½ to 4 minutes. Carefully flip the donuts and continue air frying until golden brown, an additional 3 to 4 minutes. Transfer to a wire rack to cool slightly. (8 minutes)

Optional Glaze: In a small bowl, whisk together the powdered sugar and heavy whipping cream until smooth. Dip the warm donuts into the glaze, allowing excess to drip off. Place the glazed donuts back on the wire rack until the glaze sets, about 5 to 6 minutes. (10 minutes)

For a richer flavor, try using full-fat Greek yogurt.
If the dough is too sticky, add a little more flour, one tablespoon at a time, until it becomes manageable.
Don't overcrowd the air fryer basket; cook the donuts in batches if necessary.
For a cinnamon-sugar topping, combine granulated sugar and cinnamon to taste and sprinkle over the warm donuts instead of glazing.
These donuts are best enjoyed fresh, but can be stored in an airtight container at room temperature for up to 2 days.
