In a large pot, combine the carrots, parsnips, and turnips. Cover with cold, lightly salted water. (5 minutes)

Bring to a boil over high heat, then reduce heat to medium and simmer until the vegetables are tender and easily pierced with a fork, about 25 minutes. (25 minutes)

Drain the vegetables thoroughly and return them to the pot.

Add the butter, heavy cream, nutmeg, cayenne pepper, salt, and black pepper to the pot. (2 minutes)

Using a potato masher, roughly mash the vegetables until they are broken down but still retain some texture and visible individual colors. Alternatively, for a smoother mash, use an immersion blender. (5 minutes)

Taste and adjust seasonings as needed. Serve hot.

For a richer flavor, brown the butter before adding it to the vegetables.
Feel free to substitute other root vegetables, such as sweet potatoes or celeriac, based on your preference.
A touch of maple syrup can add a lovely hint of sweetness.
This mash can be made ahead of time and reheated gently on the stovetop or in the microwave.
