Cook the Nuggets: Spray a large cast-iron or nonstick skillet with cooking spray and heat over medium-low heat. Working in batches of about 8 pieces, cook the tofu, flipping with a thin spatula, until golden brown and crisp on most sides. Spray the skillet lightly between batches. (15 minutes)

Prepare the Dipping Sauce: In a small bowl, whisk together Dijon mustard, maple syrup, and canola oil until smooth. If the sauce is too thick, add warm water, 1 tablespoon at a time, until it reaches your desired consistency. (3 minutes)

For extra crispy nuggets, consider double-dredging in the breadcrumb mixture.
Ensure your skillet is not too hot to prevent burning the breading before the tofu is heated through.
The dipping sauce can be made ahead of time and stored in the refrigerator for up to 3 days.
