Follow The Directions

01

Step

Prepare the bowl: Select a heat-proof bowl and generously grease with butter. (5 minutes)

02

Step

Combine the fruits: In a large mixing bowl, combine dates, apricots, currants, raisins, cranberries, ginger, whiskey, orange zest, and orange juice. Toss to combine. (10 minutes)

03

Step

Emulsify the batter: Pour in melted butter and stir until evenly coated. Mix in egg, heavy cream, and buttermilk. (5 minutes)

04

Step

Fold in dry ingredients: Add salt, pecans, bread crumbs, and flour and mix until batter is very thick and sticky. (5 minutes)

05

Step

Prepare for steaming: Transfer dough to the prepared bowl and press down. Place parchment over the top and seal. Stretch plastic wrap and foil over the bowl, securing tightly with string. (15 minutes)

06

Step

Chill (Optional): Pudding can be cooked immediately, but resting in the refrigerator for 8 hours to overnight is recommended. (8-12 hours)

07

Step

Set up the steamer: Lay chopsticks in the bottom of a large Dutch oven. Place the wrapped pudding on the chopsticks and fill the Dutch oven halfway with water. (5 minutes)

08

Step

Steam: Place over high heat, cover, and bring to a boil. Reduce heat to medium and steam, covered, for 4 hours, checking every hour to add more water if needed. (4 hours)

09

Step

Unmold: Use kitchen towels to lift the pudding out. Snip the string, remove the foil and plastic wrap, and peel off the parchment. Place a plate over the bowl and invert to unmold. (10 minutes)

10

Step

Serve: Brush maple syrup over the top. Cut and serve immediately.

For a deeper flavor, consider soaking the dried fruit in the bourbon overnight.
Ensure the water level in the Dutch oven remains consistent throughout the steaming process to prevent the pudding from drying out.
Serve warm with a dollop of vanilla ice cream, a drizzle of heavy cream, or a generous pour of crème anglaise.
