In a large mixing bowl, cream together the softened butter and sugar until light and fluffy. Beat in the eggs one at a time, mixing well after each addition. (7 minutes)

Stir in the carrot and apple mixture until evenly distributed throughout the batter. (2 minutes)

Lightly grease a 2-quart pudding mold or heat-safe bowl. Pour the batter into the prepared mold. (2 minutes)

Place a steamer rack in the bottom of a large, deep pot. Set the filled mold on the steamer rack. Pour enough boiling water into the pot to come about two-thirds of the way up the sides of the mold. (5 minutes)

Bring the water to a gentle boil over medium heat. Reduce heat to low, cover the pot tightly, and simmer for 2 hours and 45 minutes, or until a toothpick inserted into the center comes out clean. Check the water level periodically and add more boiling water as needed to maintain the water level. (2 hours 45 minutes)

Carefully remove the mold from the pot and let it cool for 10 minutes before inverting it onto a serving plate. (10 minutes)

For a richer flavor, soak the raisins in rum or brandy for at least 30 minutes before adding them to the mixture.
To add a festive touch, line the bottom of the mold with pecan halves or cranberries before filling with the batter.
Serve warm with rum sauce, cranberry sauce, lemon sauce, chocolate sauce, or a dollop of whipped cream.
The pudding can be made ahead of time and reheated. Store it in the refrigerator, tightly wrapped, for up to 3 days. To reheat, steam for about 30 minutes, or until heated through.
