For a smoother sauce, use a high-quality tahini paste. Some tahini brands can be quite thick; if your sauce is too thick, add a tablespoon or two of water to reach your desired consistency.
If you don't have fresh parsley, dried parsley can be used, but reduce the amount to 1 tablespoon.
Store leftover tahini sauce in an airtight container in the refrigerator for up to 5 days. The sauce may thicken upon refrigeration; simply stir in a little water to restore its original consistency.
Variations: Add a pinch of cumin or smoked paprika for a smoky flavor. You can also add a drizzle of olive oil for extra richness.
