Activate the Yeast: In a measuring cup, combine warm water and yeast. Stir gently to dissolve and let stand for 5-10 minutes, or until foamy.

Infuse the Milk: In a small saucepan, heat milk, unsalted butter, sugar, salt, and cinnamon over medium heat, stirring occasionally, until butter is melted and the mixture is steaming (do not boil).

Combine and Cool: Place mashed sweet potatoes in a large mixing bowl and pour the warm milk mixture over top. Add lemon juice and mix until smooth. Let cool to lukewarm (100-110°F), about 10-15 minutes.

Incorporate Wet and Dry Ingredients: Add the beaten egg and yeast mixture to the sweet potato mixture. Blend well. Gradually stir in 2 cups of flour and beat with an electric hand mixer at medium speed for about 3 minutes. Add enough additional flour, about 1/4 cup at a time, to form a soft, slightly sticky dough.

Knead and First Rise: Turn the dough onto a lightly floured surface and knead for 5-7 minutes, or until smooth and elastic. Place the dough in a lightly buttered bowl, turning to coat. Cover and let rise in a warm place until doubled in size, about 45-60 minutes.

Shape and Second Rise: Punch down the dough and knead gently once more. Shape into 12-16 rolls and place on a greased baking sheet. Cover and let rise until doubled in size again, about 30-45 minutes.

Bake: Preheat the oven to 400 degrees F (200 degrees C). Bake in the preheated oven until golden brown, about 18-22 minutes.

Finish: Brush the tops of the hot rolls with melted salted butter. Serve warm.

For best results, use freshly cooked and mashed sweet potatoes. Canned sweet potato puree can also be used, but the flavor may not be as pronounced.
The dough should be soft and slightly sticky. Avoid adding too much flour, as this can result in dry rolls.
If your kitchen is cold, you can place the dough in a slightly warmed oven (turned off) to help it rise.
For a richer flavor, brush the rolls with a mixture of melted butter and honey after baking.
