Transfer the grilled bluefish to a serving platter. Before serving, remove the dark, slightly stronger-tasting strip of flesh that runs along the lateral line of each fillet, if desired.

For best results, use fresh citrus juices. Bottled juices can lack the vibrant flavor of fresh.
Don't over-marinate the fish, as the citrus can start to 'cook' the fish and make it mushy.
If you don't have a citrus-flavored seafood rub, you can create your own by combining citrus zest, dried herbs, and spices.
To prevent the fish from sticking to the grill, make sure the grate is well-oiled and the grill is hot before adding the fillets.
Bluefish is best enjoyed fresh off the grill. However, leftovers can be stored in the refrigerator for up to 2 days.
