For a richer flavor, consider using browned butter instead of vegetable oil to sauté the onions and spinach.
Feel free to experiment with different cheese combinations! Fontina, mozzarella, or goat cheese would all be delicious additions.
To prevent the puff pastry from becoming soggy, make sure to thoroughly drain any excess moisture from the cooked spinach.
If you don't have time to chill the rolled pastry, you can freeze it for about 15 minutes before slicing. This will make it easier to cut clean pinwheels.
For a vegetarian option, ensure that the Parmesan cheese you use is vegetarian-friendly.
