Step

Heat vegetable oil in a soup pot over high heat. Add mushrooms, and cook, stirring occasionally, until they start to brown (approximately 4 minutes).

Stir in ginger, garlic, and the white parts of the sliced green onions. Cook until fragrant (approximately 1 minute).

Pour in the broth and bring to a gentle simmer. Stir in the soy sauce, rice vinegar, sesame oil, and Sriracha.

Add the bok choy, the green parts of the sliced green onion, and the frozen potstickers. Cook, stirring occasionally, until the potstickers are heated through (approximately 3 to 4 minutes).

Just before the potstickers are fully heated, mix the miso paste with about 1/2 cup of the hot broth until smooth. Stir this mixture into the soup. Turn off the heat, and stir in the chili crisp (if using). Taste and adjust seasoning as needed, then serve immediately.

For a richer flavor, use homemade chicken broth.
Adjust the amount of Sriracha and chili crisp to your preferred level of spiciness.
Other vegetables like napa cabbage, spinach, or carrots can be added to the soup.
If you don't have miso paste, you can omit it or substitute with a teaspoon of fish sauce for added umami.
Garnish with extra green onions, sesame seeds, or a drizzle of sesame oil before serving.
