In a slow cooker, combine the potatoes, onion, carrots, bell pepper, garlic, chicken bouillon cubes, salt, and pepper. (5 minutes)

In a small bowl, whisk the flour with a little bit of the cooking liquid to form a smooth slurry. Stir the slurry into the slow cooker. (3 minutes)

Continue cooking for 2 more hours, or until the squirrel meat is very tender and easily pulls away from the bone. (2 hours)

For a richer flavor, brown the squirrel pieces in a skillet with a little olive oil before adding them to the slow cooker.
If you don't have chicken bouillon cubes, you can substitute with 4 cups of chicken broth.
Adjust the amount of salt and pepper to your liking.
Serve with crusty bread or biscuits to soak up the delicious broth.
