Add the crushed garlic and sugar, continuing to cook and stir until fragrant (2-3 minutes). Pour in the hard apple cider and bring the mixture to a boil, scraping up any browned bits from the bottom of the pan. Pour this flavorful mixture over the pork chops in the slow cooker.

Cover and cook on Low until the pork chops are exceptionally tender (7.5 hours). Stir in the frozen peas and cook until they are tender and heated through (30 minutes).

If you don't have hard apple cider, you can substitute with apple juice or chicken broth, but the cider adds a unique depth of flavor.
