Follow The Directions

01

Step

Preheat oven to 400 degrees F (200 degrees C). (5 minutes)

02

Step

Prepare two 6-ounce ramekins. Drizzle 1 1/2 teaspoons of olive oil into the bottom of each, then sprinkle 1 tablespoon of basil chiffonade over the oil in each ramekin. (5 minutes)

03

Step

Place one goat cheese round over the basil in each ramekin. Surround the cheese with the halved cherry tomatoes, nestling them closely together. (5 minutes)

04

Step

Season generously with freshly cracked black pepper and a pinch of cayenne pepper (if using). (2 minutes)

05

Step

Spread 1 1/2 teaspoons of the remaining basil chiffonade on top of each portion. Drizzle each serving with the remaining 1 1/2 teaspoons of olive oil. (3 minutes)

06

Step

Place the ramekins on a baking sheet and bake in the preheated oven until the goat cheese is softened and slightly melted, and the tomatoes are bursting and tender, about 15 minutes. (15 minutes)

07

Step

Remove from oven and let cool slightly before serving warm, with crusty bread or crackers for dipping. (5 minutes)

For a richer flavor, use marinated goat cheese.
To prevent sticking, lightly grease the ramekins with cooking spray before adding the oil.
Adjust the amount of cayenne pepper to your preference for heat.
Serve immediately for the best texture and flavor.
A balsamic glaze drizzle after baking adds a tangy sweetness.

I didn't have fresh basil, so I used dried, and it still turned out great!

A little drizzle of honey is also fantastic with the goat cheese.

Be careful not to overbake - the goat cheese gets a little rubbery if you do.

I used different colored cherry tomatoes for a prettier presentation.
