Step

In a large bowl, whisk together the flour and salt. Add the olive oil and honey, then gradually incorporate the lukewarm water, mixing until a dough forms. The consistency should resemble pizza dough. Knead the dough by hand on a lightly floured surface until it becomes soft and very smooth. This should take approximately 10 minutes.

Brush the top of the dough with a light coating of canola oil. Cover the bowl with plastic wrap and allow the dough to rest at room temperature for at least 30 minutes, or up to 2 hours. This resting period allows the gluten to relax, resulting in a more tender flatbread.

After resting, divide the dough into 10 equal pieces. On a lightly floured surface, roll out one piece into a circle. Evenly brush the top of the dough with canola oil. Fold the sides of the circle inwards to meet in the center, then fold the top and bottom edges in to meet in the center, creating a square shape. Repeat this process with the remaining pieces of dough.

Preheat a large skillet or griddle over medium heat.

Roll one square of dough back into a circle on a lightly floured surface. Place the circle in the preheated skillet and cook for 1 to 2 minutes, until the bread begins to puff up slightly. Drizzle a small amount of oil on top of the bread, then flip it over. Continue cooking for another 1 to 2 minutes, until the sabaayad is golden brown and crispy. Transfer the cooked sabaayad to a plate and cover with a clean kitchen towel to keep it warm and soft. Repeat with the remaining pieces of dough.

For a richer flavor, try using melted butter instead of canola oil for brushing the dough.
Sabaayad is best served warm. If you're not serving it immediately, you can reheat it in a dry skillet or microwave for a few seconds.
Experiment with different toppings and fillings! Sabaayad is delicious with honey, cinnamon sugar, stews, sauces, or even on its own.
