For a smoother chutney, use a food processor to pulse the final mixture a few times. Be careful not to over-process it. Adjust the amount of chile pepper to your preferred level of spiciness. If you can't find dried sour cherries, dried cranberries make a good substitute. This chutney can be stored in an airtight container in the refrigerator for up to a week.
