For a spicier chutney, increase the amount of chili powder to taste. If you don't have preserved ginger, you can substitute with 1/4 cup of minced fresh ginger. Adjust the amount of brown sugar to suit the sweetness of your peaches. Sterilizing jars: wash jars and lids in hot, soapy water, then place in a boiling water bath for 10 minutes. Remove and let air dry. To prevent burning, use a heavy-bottomed pot and stir frequently, especially towards the end of the cooking time.
