Cool and Check Seals: Carefully remove the jars from the stockpot and place them on a cloth-covered surface or a wooden cutting board, several inches apart. Let them cool undisturbed for 24 hours. As the jars cool, you should hear a popping sound as the lids seal. After 24 hours, gently press the center of each lid. If the lid doesn't flex up and down, it's properly sealed. Remove the rings (they can rust) and store the sealed jars in a cool, dark place. Unsealed jars should be refrigerated and used within a few weeks. (Cool time: 24 hours)

For a smoother jam, use an immersion blender to puree the peaches slightly before cooking.
Adjust the amount of Amaretto to your liking. You can also substitute other liqueurs, such as peach schnapps or brandy.
If you don't have powdered pectin, you can use liquid pectin, but follow the package instructions carefully.
It is critical to follow the processing times for safe canning. Adjust processing time for altitude. Adding 5 minutes for 1,001 to 3,000 feet, 10 minutes for 3,001 to 6,000 feet, 15 minutes for 6,001 to 8,000 feet, and 20 minutes for 8,001 to 10,000 feet.
