For a richer flavor, allow the dressing to sit for at least 30 minutes before serving to allow the flavors to meld. If you prefer a tangier dressing, increase the amount of red wine vinegar by a tablespoon. Fresh parsley can be used in place of dried parsley. Use 1/4 cup of finely chopped fresh parsley. Try adding a pinch of cayenne pepper for a subtle kick.
