Follow The Directions

01

Step

Combine cinnamon, cumin, salt, ginger, cloves, nutmeg, turmeric, and curry powder in a large bowl. (Prep time: 5 minutes)

02

Step

Add lamb to spice mixture and mix until well combined. (Prep time: 3 minutes)

03

Step

Melt butter in a large pot over medium heat. Add onion and sauté until soft and just beginning to brown, 5 to 10 minutes. Add spiced lamb; cook and stir until browned and crumbly, 6 to 8 minutes. (Cook time: 15 minutes)

04

Step

Add consommé, garbanzo beans, beef broth, chicken broth, diced tomatoes, sweet potatoes, carrots, lentils, apricots, and honey; bring to a boil. (Prep time: 10 minutes)

05

Step

Reduce the heat to low and simmer until vegetables and lentils are tender, about 30 minutes. Season with pepper. (Cook time: 30 minutes)

For a richer flavor, consider using bone-in lamb shoulder, braised until tender, instead of ground lamb.
Adjust the amount of honey to your preference, depending on the sweetness of your sweet potatoes and apricots.
Serve with a dollop of Greek yogurt and a sprinkle of fresh cilantro for an extra touch of freshness.
This stew tastes even better the next day, as the flavors meld together beautifully.
